Basic Cupcake Recipe
Makes 12 cupcakes
- 160g unsalted butter at room temperature
- 160g Golden Caster Sugar
- 160g Self Raising Flour
- 3 Large Eggs
- 1 tsp Vanilla Extract
Optional – 60g Cocoa Powder (To make chocolate flavour cupcakes)
- 200g unsalted butter at room temperature
- 400g Icing sugar
- 1 tsp Vanilla Extract
- 3 tbsp Milk
Optional – 50g Cocoa Powder (To make chocolate flavour buttercream)
- Heat oven to 180C/160C fan/gas 4 and fill a 12-cupcake tray with cases.
- Beat together the butter, sugar & vanilla until light and creamy.
- Add the eggs and flour (and cocoa if using) and mix until well combined and smooth.
- Spoon the batter into the cupcake cases. Fill each one around ½ to 2/3 full, make sure to leave room for the sponge to rise.
- Bake for 15-20 mins until golden brown and a skewer inserted into the middle of each cake comes out clean. Leave to cool completely.
- To make the buttercream beat the butter until soft & creamy and light in colour.
- Add the icing sugar (and cocoa if using) & vanilla and beat together until smooth (start off slowly to avoid an icing sugar cloud) then beat in 3 tbsp milk.
- If using food colouring add this now (start with a small amount) and mix through.
- Pipe or spoon onto the cooled cupcakes and decorate. Add sprinkles!
